Cooking in the Crockpot is my favorite! Your food comes out so flavorful and tender every time. And hello who doesn’t love dinner with minimal work. . . this mom loves it. Seriously though I could cook everything in my slow cooker and be happy. I was meal prepping and thought this would be a yummy dinner option for the week. Serve it the traditional way on a tortilla or on top of some white or brown rice for a delicious fajita bowl.
We had plenty left over for two more nights of dinner. Score for my meal prepping! You most certainly wont hear me complain about these leftovers; the hubby either. This is one of our favorites.
What you will need
*2-3 Boneless skinless chicken breast
*Green, Yellow and Red Peppers
*1 tsp Garlic Powder
*2 Tbsp Chili Powder
*3/4 tsp Coriander
*1 tsp Paprika
*2 tsp Cumin
*1 tsp Salt and Pepper
*Can of diced tomatoes
*Sour Cream, Cheese, Rice, Beans, Salsa, Guacamole for toppings
*Cut peppers and onions
*Place half of peppers and onions in bottom of slow cooker
*Add chicken on top of vegetables
*Using rest of peppers and onions cover chicken
*Pour diced tomatoes on top
*Combine all seasons in a bowl and sprinkle on vegetables, chicken and tomatoes
*Cook on low for 6 hours or high for 3-4
*Serve and enjoy the deliciousness!

Cooking on low makes the chicken extremely tender, juicy and so flavorful. I like my chicken shredded but if you prefer it in strips I would suggest cooking on high for 3 hours and cutting into strips. Also if you are not a fan of spice or too much heat add a little less Chili powder.
These fajitas will be leaving you wanting seconds or maybe even thirds.
