The Best Chicken Enchiladas

This is by far my families favorite meal. Even the kids come back for seconds! We all agree this is the Best Chicken Enchiladas, we have tried a few different kinds. I first learned this recipe  from a friend and have adjusted it to what my family likes. At least once a week my little girl will ask for enchiladas.

It does have a little heat since it does include Jalapenos but you can just leave those out and it becomes a very mild dish. Like I have stated above I have adjusted this to what my family likes. Give it a tweek or two to make it your own then wait for you family to beg for more.

You could also add onions, green peppers, sour cream, Salsa, tomatoes, it really is whatever you think your family would like.

The best part it is does not leave a huge mess in my kitchen. I use one large pot, a medium sauce pan and a baking dish to make this yummy meal. Less dishes for the hubby to do when I am done!

So here we go.

       Chicken Enchiladas

Ingredients

Chicken Enchiladas

1. 3 boneless, skinless chicken breast

2. 28 oz can of Green Chile Enchilada Sauce – Mild

3. 16 oz can of Refried beans

4. 2 cups of White Rice

5. 1 Package of original Cream Cheese

6. Tortillas – Number will depend on how large you make your enchiladas

7. 4 oz can of Diced jalapeno – I only use about half

8. 2.5oz can of Diced Olives

9. About a cup of Grated Cheese

10. Sour Cream for topping

Directions

*Preheat Oven to 400

*Cook your white rice per the box directions

*Cut chicken breast into cubes – I prefer small pieces

*Place Chicken into a large pot and cook on Medium – High heat until cook through

*Add Green Enchilada Sauce, Cream Cheese, Refried Beans, Jalapenos and olives to pot with Chicken. Allow to heat through, until Cream Cheese and Refried Beans are smooth

Chicken Enchiladas

*Add cooked White Rice to mixture and combine well

*Grease a glass pan with non stick stray

*Place Enchilada mix into tortillas based on how big you want them to be, roll and place in pan

Chicken Enchiladas

*Take remainder of the mixture and put onto of the rolled enchiladas, top with cheese

*Bake at 400 for 15-20 Minutes
